Chocolate cake with raspberry decoration



  • 3 tbsp (40 grams) hot melted butter
  • 1/2 cup (65 grams) flour
  • 1/4 teaspoon salt
  • 1/3 cup (30 grams) universal cocoa powder
  • 4 large eggs
  • 2/3 cup (135 grams) granulated white sugar
  • 1 tsp vanilla
  • Chocolate Filling:
  • 5 oz (140 grams) chocolate coarsely chopped
  • 1 cup (240 ml) heavy whipping cream
  • 1 tbsp (15 grams)granulated white sugar
  • 1/2 tsp pure vanilla


Serve with:
Fresh/frozen raspberries

First preheat your oven to 350 degrees F (180 degrees C).
Start by sifting the flour and the cocoa powder. Make sure that you get rid of all the lumps.

Whisk the eggs and sugar in a heatproof bowl over a saucepan of simmering water.

Whisk until medium warmth. Remove from heat and place the mixture in the bowl of your kitchen robot.

Blend on high speed for around 5-6 minutes or until the mixture looks like heavy whipping cream- tripled in volume and thick. Then add the vanilla extract.

The next step is to sift in one third of the flour and cocoa mixture into the whipped eggs and fold them in using a rubber spatula. Afterwards fold in the other half and then the rest.

Melt the butter and put a cup of batter into the butter. After combined, add the butter mixture into the batter and mix with the spatula. The next steps are to line a pan with parchment paper or butter it. Pour the mixture in the pan and bake the cake for 20-25 minutes or until a tooth pick comes out clean out of the cake.

For the chocolate filling:

Melt the chocolate in a heatproof bowl over a saucepan of simmering water. After melted, remove from heat and let the chocolate cool to room temperature.

Then in a bowl of your electric mixer, whisk together the whipping cream and the sugar until gets thick. Afterwards you can either fold or whisk in one third of the cream into the melted chocolate. Then gently fold in the rest of the chocolate in three stages in total into the chocolate. Pour the whole mixture on top of the cooled cake and decorate it with raspberries.
