Beet Salad Recipe

Beet is a colorful addition to our healthy diet. A simple salad of boiled beet and sweet and sour dressing could substitute a main course because of its nutritious characteristics.



  • 1 medium or 3 small red beet roots
  • 2 tablespoons chopped parsley
  • 1/2 cup lemon juice
  • 2 tablespoons olive oil
  • salt
  • pepper
  • mustard
  • oregano or your favorite herbs

Preparation time: 10 minutes
Cook Time: 1 hour

How to prepare?

Wash the beet roots and peel it. Boil into a deep saucepan until it gets tender and soft. During the cooking process, add some salt. Boiling will take about an hour.

Drain the beets and cut it into cubes.


Prepare a dressing by mixing lemon juice, olive oil, salt, pepper, mustard, parsley and herbs. Mix the beets in a large bowl with the dressing and serve.


TreColore salad with carrot, beet and apple


The TreColore salad is very nutritious and has an anti-aging effect. It contains only fresh or dried ingredients. This attractive but easy to cook salad, is rich in fiber, antioxidants and vitamins. It can be served as a complement to a meat dish of as a main dinner course.

  • 100 g beet (45 kcal )
  • 200g carrots (80 calories)
  • 1 medium apple (50 kcal)
  • 20 g pumpkin seeds (135 kcal)

For the Dressing

  • 2 tablespoons olive oil ‚Äď 220 kcal
  • Juice of 1/2 lemon (15 kcal)
  • 1 tablespoon balsamic vinegar
  • 1/4 tea spoon fine-grained sea salt
  • 1 tbsp. honey (64 kcal)
  • 1 tbsp. mustard (30 kcal)

How to prepare?
Wash the vegetables and the fruit. Peel the beet and cut it on cubes. Put carrots, the beet and an apple into a food processor and shred. Place the mixture in a round bowl. Prepare the dressing by mixing the olive oil, lemon juice, balsamic vinegar, salt, honey, mustard and water. Pour it in the bowl and toss thoroughly. Finally, add the pumpkin seeds and serve.

Exotic spinach salad

Spinach could be a perfect base for a simple, nutritious and low-calorie salad. You can pick a pack of baby spinach or a plant with bigger leafs.


To prepare an exotic salad for four persons, you will need spinach, white feta cheese of yellow cheese such as Emmental and Gouda, cherry tomatoes, some olive oil, freshly squeezed orange juice, salt and balsamic vinegar.

This rich salad could be served as an accompaniment to other dishes or as a single meal. It is very nutritious and contains low calories. You can change the ingredients to your taste. For example you can opt for lettuce instead of spinach.

How to prepare?
Carefully wash and dry the vegetables. Chop the spinach leafs and put them in a large bowl,. Add the cherry tomatoes or chopped sun-dried tomatoes, cheese, walnuts and raisins. Pour the mix of olive oil,fresh orange juice, fine-grained sea salt and balsamic vinegar. Then toss thoroughly and serve.
